Spinach and Goat Cheese Salad
Ingredients:
12 ounce package cleaned spinach leaves
4 ounces goat cheese, crumbled
1/2 pound bacon
1/3 cup dried cranberries
1/3 cup toasted walnuts
1/4 olive oil
1 tablespoon red wine vinegar
1 tablespoon minced shallots
Process:
Cook bacon until crisp. Remove from pan and crumble when cool.
Add olive oil and vinegar to bacon fat, add minced shallots. Season
to taste with salt and pepper.
In a large bowl, place spinach, goat cheese, cranberries and walnuts.
Toss with warm bacon dressing until spinach leaves are coated. Garnish
with crumbled bacon bits.
