Non-Vintage Cuvée Rouge
This Thornton Winery Cuvée Rouge is also made in the Methode Champenoise style. The primary fermentation is done in Stainless Steel tanks, followed by a second fermentation in the bottle. The Carbon Dioxide that is created cannot escape, which explains the effervescence one sees in the glass. Grapes are hand-picked when the temperature is cool, and then go immediately into the press without Destemming (the wine’s darker color is due to several hours of skin contact). Following Tirage, the bottles of Cuvée Rouge rest on their side for a number of months. This is followed by riddling and finally Disgorging and Dosage. Our style is a wine that has aromas of strawberries and black cherry that persist through a sweet, but not cloying, finish.
